Crunchy cucumber is topped with creamy feta & sprinkled with a touch of mint in these light & healthy 3-ingredient Cucumber Feta Boats.
Happy New Year! It’s officially time for new year’s resolutions, fresh starts, and healthy eats! Greyson and I are in the throws of packing for our move to California later this week, so we’ve been eating lots of snacks and take-out to save time. And with all this take-out food, I’ve been feeling super sluggish. I thought it would be a good change of pace if I tossed together a quick snack that didn’t bog me down.
I peeked in my fridge and threw together these 3-ingredient Cucumber Feta Boats. All I did here was peel my cucumbers (but you don’t have to), then crumbled some feta cheese on top, and sprinkled with freshly chopped mint.
Here’s the trick to using feta cheese: always rinse it off. Feta cheese comes in containers filled with salted water, so when you remove it from the container, it’s extremely salty. This salted water – a.k.a. brine – keeps the cheese fresh and potent. When you pull the cheese out of the brine, run it under cold water to remove that added saltiness, then pat it dry with a paper towel. Now you’re ready to crumble it onto your salad, cucumber feta boats, pasta, or anything else!
I personally like putting feta cheese in a pita pocket and toasting it until the cheese is gooey, but that’s not exactly light and healthy for the new year, so I opted for these instead! If you’d like to add some bread but keep the cucumbers in this recipe, you can assemble these boats inside of a pita pocket for a handheld snack. It’s great for a vegetarian breakfast on-the-go.
Making these boats reminded me that I can never be too busy for a healthy snack (even while I’m trying to pack my whole house into my car to drive it across the country). It’s about time to hit the road for our move. See you on the other side!
- 2 small cucumbers, peeled and halved lengthwise
- 4 tbsp (¼ cup) feta cheese, rinsed and crumbled
- ½ tsp chopped fresh mint, plus more if desired
- If desired, seed cucumber halves.
- Top each cucumber half with 1 tbsp feta cheese.
- Sprinkle each with ⅛ tsp mint, plus more if desired. Serve.
When using feta cheese, always remove it from the brine and rinse it with cold water, to reduce added saltiness. Then pat dry and crumble with your hands or a fork.
