Spiced Apple Sundaes

Serves: 2
  • 1 tbsp unsalted butter
  • 1 tsp honey
  • 1 red apple, peeled and cubed
  • 2 tbsp light (golden) brown sugar
  • 2 tbsp orange juice
  • ¼ tsp cinnamon
  • ¼ tsp ground ginger (optional)
  • 2 scoops regular or soy vanilla ice cream, or vanilla frozen Greek yogurt
  • 2 tbsp chopped walnuts, toasted (optional)
  1. In a small saucepan, melt butter and honey over medium heat.
  2. Add apples, stir to coat, and saute for 10 minutes until softened.
  3. Add brown sugar, orange juice, cinnamon, and ginger if desired. Stir to combine. Cook about 1 more minute until syrupy.
  4. With a slotted spoon, scoop out apples and divide between two bowls alongside ice cream. Pour remaining sauce over entire bowl, and top with toasted walnuts.
